Caprese salad


One of my favorite summer treats is fresh, out of the garden (or Farmer’s Market) tomatoes.  There is just something about a fresh sliced tomato that makes everything taste better!  Did you know that tomatoes are a super food?

Here is some tomato info:

  • eating tomatoes twice a week can reduce the risk of prostate cancer by up to 43%
  • the lycopene present in tomatoes helps guard against cervical, breast and lung cancer
  • lycopene helps ward off heart disease
  • tomatoes are high in vit A, vit C, calcium, and potassium
  • cooking tomatoes in oil encourages absorption in the intestines and a 3-fold increase in plasma lycopene concentration


2-3 tomatoes, sliced
1/2 pound fresh mozzarella, sliced 1/4 inch thick
fresh basil leaves
EVOO for drizzling
sea salt and fresh ground pepper to taste

Layer tomatoes, cheese, and basil on plate.  Drizzle with EVOO and top with salt and pepper.  It is that simple AND DELICIOUS 🙂
