Avocado and cuke salad

Here is a great side dish option on a HOT, steamy summer evening!

INGREDIENTS:

1 large cucumber
2 avocados, diced
handful of fresh cilantro
handful of fresh mint
juice of 1 lime
sea salt and pepper
1/4 red onion, chopped

Combine all ingredients in bowl and serve.  Makes a great little chip topper, but it is also good as a stand alone side dish.

(Recipe from my friend LaDez.  Thanks!  **The original recipe does not call for onion, but I prefer it with it added.  It also calls for 1 T of EVOO.  I don’t think it needs it, but I am sure it can’t hurt to add it.)
