Pad Mein, Lo Thai

I was in the mood for Pad Thai last night, but didn’t want to take the easy way out and get the box mix.  Don’t get me wrong, that box stuff is awesome (with a few added touches), but it is more than likely full of preservatives and other unpronounceable ingredients.  I wanted some fresh Pad Thai made from things I would consider healthy.  Unfortunately, I couldn’t find any Pad Thai noodles, and didn’t want to make an extra stop at the Asian grocery store to find them. I compromised and made Pad Thai with Lo Mein noodles, thus Pad Mein or Lo Thai was created 🙂

1 shallot, finely chopped
3 cloves garlic, finely minced or crushed
1 egg
1 cup fresh bean sprouts
1 bunch green onions, diced            
handful of fresh cilantro
1/2 cup peanuts
2 T sesame oil
2 T hot chili oil
1 T soy sauce
1 T rice vinegar
1 T brown sugar
lime wedges
handful of pea shoots
1 # shrimp (I use frozen just to save cooking time.)
1 T fresh ginger, finely chopped
1 cup mushrooms, chopped
handful of carrot straws
Lo Mein (or Pad Thai) noodles- cooked as directed
1 jalapeno
1 T chili paste

First step:  Place hot chili oil in wok with garlic, shallots and ginger.  Cook for 1-2 minutes and add shrimp to pan.  Once shrimp are warmed (or no longer opaque if using raw) remove from pan and set aside.

Second step:  Add a little sesame oil if needed and stir fry veggies-  mushrooms, bean sprouts, carrot straws- cook for 2 minutes and remove from pan.

Third step:  Place egg in wok and scramble.  

Fourth step:  Add cooked noodles to egg and stir fry for 1 minute.  Next add your shrimp and reserved cooked veggies.  Add 1 T chili paste.  Stir to combine flavors.

Fifth step:   Add your green onions, jalapeno, and peanuts next.

Sixth step:  Combine soy sauce, rice vinegar and sugar in small bowl and then add to above.

Seventh step:  Plate the Lo Thai and add some fresh cilantro and pea shoots to top. Also a few extra peanuts if you have them.  

Eighth step:  EAT!
