1/4 c EVOO
1/4 c fresh squeezed lime juice (I do 1/2 lime and 1/2 lemon)
1/4 tsp cumin
1 tsp Dijon mustard
1 tsp honey or agave nectar
sea salt and pepper to taste
Coconut Salad Ingredients:
8 cups mixed greens with arugula
1/2 cup coconut
1/2 cup cashews
1 cup diced fresh pineapple
1 cup diced fresh peaches or mango
Toss greens with dressing to coat. (May be some left over) Then toss in toppings and serve.
It would be great with a piece of grilled chicken or fish on top!
