Spicy Chicken Stir Fry

Spicy Chicken Stir-fry
2 tsp peanut oil
1/4 tsp red pepper flakes
2 boneless chicken breasts cut into strips
1/2 c asparagus
1/2 c sliced carrots
1/4 med onion sliced
1/3 c snow peas
sliced almonds
2 tsp soy sauce

Combine peanut oil and red pepper flakes in skillet, add chix and cook 3-4 minutes. Add all remaining items to pan and cook another 3-4 minutes. Serve with rice.
Makes 1-2 servings. 428 cal, 18 fat (3sat), 20 carbs, 7 fiber, and 48 protein.

(I didn’t have any onions in the house- so I added bamboo shoots and a little left over fresh sweet corn and red cabbage.)  *You can kick up the spice with a little chili sauce and 1 T of Hoisin.
