Thai Chicken Burgers

Thai Chicken Burgers


1# ground chicken
3/4 cup whole wheat bread crumbs
2 cloves crushed garlic
handful of chopped cilantro
1 tsp ground coriander
2 T chili paste
1 bunch scallions, chopped

Mix well and form into 1/4 pound patties.  Refrigerate, covered for 30minutes.

Top with carrot sticks, tomato, and fresh greens.  

I prefer mine with some spicy mustard but the original recipe from Fitness Foods includes a dressing to top the burgers.  Here it is:

Ingredients~ 1/2 cup sugar, 2 T white vinegar, 2 T chopped peanuts, 3 T water
Put sugar, vinegar and 3 T water in small sauce pan-  stir over low heat until sugar dissolves.  Simmer for 5 minutes to thicken.  Cool and stir in peanuts and some extra cilantro.
