Lentil, corn, and salad wrap


1 can brown lentils, rinsed and drained (I used dried lentils and cooked them in boiling water for 5 minutes and then left them covered for another 10minutes off  the heat.)
1 can corn kernels
2 ripe tomatoes, diced
1/2 red onion, chopped
1/2 red pepper, chopped
handful of fresh flat-leaf parsley
2 T low-fat mayo
flat bread or wrap (I use these http://www.josephsbakery.com/p-10234-Flax-Oat-Bran-and-Omega-3-Whole-Wheat-Flour-Tortilla)
1/2 cup ricotta
2 handfuls of fresh greens

Put lentils, corn, veggies and parsley in bowl.  Stir gently and add mayo.  Mix to combine.

Spread the bread or tortilla with ricotta and divide out the lentil salad and greens…and that’s a wrap!

~ I am trying to get away from eating a lot of deli meat during lunch.  It is just not a great “healthy” option, especially every day.  Sure my boys LOVE sandwiches, but filling their bellies with nitrates and a bunch of other preservatives is just not in my long-term plan for their future health.
