One of my readers, Lorraine Trentini, left this recipe as a comment~ so I had to give it a try! She wrote “good enough to fool you!”
1 1/2 pd asparagus, trimmed
1 tsp cumin
1 tbsp reduced-calorie mayo
1 tbsp fresh lime juice
1/4 cup cilantro, coarsely chopped
3 med scallions, thinly sliced (or red onion)
1 med. jalapeno pepper, minced
1 med. garlic clove, minced
1/8 tbsp Worcestershire sauce
S&P to taste
1/8 tsp hot pepper sauce (optional)
Bring large pot of water to boil. Add asparagus and cook until tender , about 10 minutes. Drain.
Place asparagus into food processor and puree until smooth. Stir in remaining ingredients and serve. Yields 1/4 cup per serving.
He took a few bites and then I
told him that there wasn’t any avocado in
it. He looked puzzled I told him it was
made from asparagus, and he said, “Well
the color is off and the texture is off, but
it is good. I just prefer avocados to be
avocados and asparagus to be asparagus.”
