Ceviche

1/2 # sushi grade white fish (I used Barramundi- from Coastal Seafoods)
4 limes, juiced
1 lemon rind
3 T OJ
1 clove garlic, finely chopped
1-2 tomatoes, diced
1/4-1/2 red onion, diced
1 jalapeno, diced
1 Habanero, seeded and diced
1/2 cucumber, diced
1 handful of cilantro, chopped
sea salt (be generous) and pepper

Dice fish into small cubes and place in bowl with lime juice, lemon rind, OJ, garlic, sea salt and pepper. Make sure the fish is completely covered in lime juice.  Place bowl in refrigerator, covered.  Let sit up to 4 hours.  (I bought sushi grade fish to eliminate this time constraint.  I left mine in the fridge for 1 hour.)

Add all other ingredients and stir to combine.  Place back in fridge for 30 minutes.

Serve with tortilla chips.
