CHICKEN AND ASIAN NOODLES WITH HONEY AND LIME DRESSING
INGREDIENTS~

Dressing-
3 tblsp honey
4 tblsp soy sauce
zest and juice from 2 limes
2 shallots, finely chopped
1 tsp grated fresh ginger
1 small red chili, seeded and chopped (or 1 T chili paste)

1 lb Singapore noodles (or Lo Mein)
1 rotisserie chicken
1 1/2 cups snowpeas trimmed and cut in half on the diagonal
2 cups bean sprouts
1 can baby corn
2 sticks celery, cut into thin long shreds
2 handfuls of mint chopped and whole leaf

Prep time: 20min
Cooking time: 5 min
Serves 4+

Combine all dressing ingredients in small bowl. Cook noodles as directed on package. Place in large mixing bowl.

Shred the flesh from the chicken. Blanch snowpeas in saucepan of boiling water. Boil for 1 min, then drain, and refresh. Add snowpeas to the noodles. ( I actually skip this step and just throw the pea pods in. ) Add chicken meat to noodles.

Add the sprouts, celery, baby corn, mint and dressing and toss well to combine.  ( I sometimes use radishes for some extra crunch too.)  Serve immediately.
