Cobb with corn, yes!

Cobb salad:

Bag of mixed greens
2 chicken breasts, grilled
2 golden beets, roasted with EVOO, sea salt and pepper
2 hard-boiled eggs, quartered
1 avocado, diced
8 cherry tomatoes, halved
4 strips of bacon, crumbled
1-2 cobs of corn, grilled with kernels removed

Blue cheese vinaigrette:

2-3 T EVOO (start with 2 and add a little at end if needed)
splash or 3 of balsamic vinegar
2 T crumbled soft blue cheese
1 tsp honey or agave nectar
1/2 tsp Dijon mustard
1 clove garlic, crushed
sea salt and pepper to taste
(mix the above in small bowl and drizzle on top of salad)
