Who needs a taco shell when you can pack all the deliciousness of a taco into a yummy salad?!
INGREDIENTS:
1# grilled chicken
2 cobs of corn, grilled
1/2 can of black beans, rinsed and heated
1/2 red pepper, chopped
1/2 red onion, chopped
bag of mixed greens
Put all the ingredients in your bowl and serve with a dollop of hummole (see recipe under Dip category) and 1-2 T of your favorite salsa (I use Mrs. Renfro’s Habanero).
If you still want a little crunch to it, you can crush a few tortilla chips on top. (Sorry, this picture looks kind of gross. The salsa made it look a little gory :O )
