This light breakfast is packed with fresh summer berries and a little zest.
1 cup whole wheat couscous
1 cup water (or unsweetened apple juice)
juice of 1/2 orange
zest of 1/2 orange
1 tsp cinnamon
1 tsp shredded mint
2 T maple syrup
1 cup of plain or flavored yogurt
Boil water (or juice) in saucepan. Add couscous, zest, orange juice, cinnamon, and mint. Cover and let rest for 5 minutes. Fluff with fork. Cool in refrigerator for a few minutes.
Separate couscous into bowls (makes about 3 servings). Add large dollop of yogurt. Top with fruit of choice and drizzle with maple syrup.
