Banzo beans!


1 can of garbanzo beans
1 package of crumbled feta
3 canned roasted red peppers, chopped
1/2 red onion, chopped
12 cherry tomatoes, diced
6 green olives, finely chopped
1/2 lemon, freshly squeezed
2 Tblsp EVOO
handful of fresh herbs ( I prefer parsley and basil. )
sea salt and pepper to taste

Combine all the above ingredients and serve on top of mixed field greens, arugula or spinach.
