Raspberry-Basil Salad

Raspberry Basil Salad

Dressing:

  • 1/2 pint fresh raspberries (reserve a few for salad topping)
  • handful of fresh basil (or mint)
  • 1/2 jalapeno pepper
  • 2 T EVOO
  • sea salt and pepper to taste
  • 1T fresh ginger

Combine all ingredients and puree.  You may need to adjust the EVOO amount to desired thickness.  I actually prefer this dressing to be on the thicker side. 

Salad Ingredients:

  • 2 grilled chicken breasts, chopped
  • 1/4 cup salted sunflower seeds (you can use any type of nut)
  • goat cheese
  • a couple of fresh raspberries
  • 1 fennel bulb, chopped
