- 1/2 Rotisserie Chicken (or 1-2 chicken breasts)
- 1/2 mango, cubed
- 2 stalks of celery, diced
- 2 T low-fat mayo (I like the mayo & olive oil combo one from Kraft)
- sea salt and pepper to taste
- 1/2 tsp cardamom
Combine all ingredients and serve on top of spinach. I think it would be best in a wrap versus bread~ mine got a little messy! Add a little side of cottage cheese and some fresh veggies and you have got yourself a lunch worth eating!
