1 can cannellini beans
1 cup chicken broth
1 bay leaf
Drain beans and rinse in cold water. Add all ingredients to pot and simmer for 10 mins. Remove bay leaf. Puree bean mixture in processor and season with ground pepper and sea salt. Serves 2.
QUICK AND YUMMY SIDE DISH!
I prefer the mashers on top of sautéed spinach with a grilled piece of fresh fish. Again, this meal is done in about 10-15 minutes.
