BBQ Salmon Salad

BBQ Salmon Salad


  • 2 T EVOO                                                                         
  • rind of one orange
  • 1/2 the juice of one orange (reserve other half)
  • 1 clove garlic pressed
  • dash of cayenne pepper
  • sea salt and pepper to taste

Drizzle one salmon filet (I use 1 pound of fresh salmon, so we each get about 8 ounces) with 1-2 T of BBQ sauce and grill.

Salad Ingredients:

  • 1/2 red pepper, chopped
  • 1-2 slices of red onion, chopped
  • orange slices (use the half reserved from dressing)
  • crumbled goat cheese
  • handful of walnuts or pecans
  • 1 avocado, diced
  • mixed field greens or spinach
