That’s a wrap

I found these delicious organic sprouted grain tortillas (made by French Meadow Bakery) at the grocery store yesterday and fell back in love with lunch. Okay, that is a little bit of an over-statement.  I really only LOVE lunch when I am sitting on a patio in Frisco, CO enjoying the mountain scenery, drinking a beer and hanging out with Ryan (no kids).  BUT, these wraps are yummy.

Adult wrap: rotisserie chicken, avocado, spinach, and tomato

Kid wrap:  Pepperoni and cheese, side of cottage cheese, fresh fruit and veggies

If you haven’t given rotisserie chicken a look lately, you should!  It is so versatile.  I prefer it to deli meat for lunches and it is a great quick pasta addition if you are in a hurry at dinner.  We seemed to be rushed at dinner time like most families I guess.  We aren’t taking the kids to soccer and baseball….yet, but Ryan and I do a majority of our workouts around the dinner hour.  In Winter (and in this year’s case Spring included) we have 5:45 spinclass or are doing Spinervals in the basement, and April thru November (keeping fingers crossed) we do our rides or runs at this time. It just seems most convenient to us.  Maybe because we are NOT morning people at all.  I prefer a late night to an early morning most days.  In fact, the only time I wake up earlier than my kids is if I have to get a run in before an odd shift at work or I have a race.  I read a great quote yesterday that said, “Never go to bed on the same day you woke up.”  I agree.
