Stir-fry. It’s what’s for dinner.

Thai Beef Stir-Fry

  • 1 lb lean sirloin steak, cut in thin strips                     
  • 2-3 cloves garlic, chopped
  • 1 T fresh ginger, finely chopped
  • 1 tsp brown sugar
  • 2 T fish sauce
  • 2 tsp EVOO
  • 1 T chili sauce or finely chopped chillies

Marinate the above mix for 2 hours or over night. Cook beef in wok or non-stick pan until browned and add your favorite veggies. ( I use basil, carrots, snap peas, broccoli, and whatever seems tasty at the moment.) Stir fry for 3-5 minutes until veggies are tender and serve over rice or wheat berries.  

This is one of my favorite recipes on a work day.  I can marinate the beef and make the wheat berries ahead of time.  Then I just grab a single serving of the meat and toss in some veggies to stir fry with it, and I have a delish meal to bring to work and Ryan and the boys can make their own version a few hours later.  This picture is what the boys chose for their stir-fry tonight:  steak, bamboo shoots, bean sprouts, carrots, asparagus, and green pepper.  They always choose rice over wheat berries. *sigh*

    I’ve always said, the boys have great taste! (And knowing you, you’re giving them brown rice!) By the way, this picture has made me very hungry.
