- 1T coconut flour
- 1/3 cup fresh parsley, coarsely chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, crushed
- 2 eggs, lightly beaten
- 2 T coconut milk, full-fat
- 1/2 cup crumbled feta (This is the only non-paleo part, but trust me it is worth it!)
- 1 1/2 tsp sea salt
- 1 1/2 tsp ground pepper
- 1 pound ground turkey
- 1/2 cup chopped green pepper
- 1/2 cup chopped white onion
Preheat oven to 375 F.
Prepare a loaf pan with coconut oil.
In large bowl, mix all ingredients to combine flavors. Pack mixture into loaf pan and bake for 45 minutes or until internal temperature reads 165 F.

Rowan says its the best he ever had. Carson didn’t like the feta, but he is weird about cheeses. I doubled it and made two loaves for lunch left overs.
