Cauliflower pizza crust

One thing I miss since going Paleo in October is pizza. I love pizza. BUT pizza is all things non-paleo, right? Crust, cheese, more cheese, ugh! Until now. Cauliflower crust. (Okay so I had to allow cheese, but at least it was grain-free.) :)

Ingredients:
1 cup cauliflower, riced and cooked
1 cup shredded mozzarella
1 egg, beaten
1 tsp oregano
1 clove garlic, crushed
1/2 tsp sea salt

Preheat oven to 450.

Rice cauliflower in food processor. Cook in microwave safe bowl with 1/4 cup water for 6 minutes. Drain off all water.

Generously grease a cookie sheet with olive oil. (I suggest lining with non-stick aluminum foil or parchment paper and lightly greasing that. My crust stuck a bit to my pan.)

In medium bowl combine cauliflower, cheese, egg and spices. Transfer to cookie sheet and shape into pizza dough. Brush crust with a little oil to help it brown in oven.

Bake at 450 for 15 minutes. Remove from oven, add sauce and toppings of choice. Place under broiler until cheese is melted, approx. 4 minutes.

We made some homemade chicken wings too:) A perfect football watching meal…if only the Packers would have won :(

    Have you tried cooking the riced cauliflower with adding the water? I had to confirm what I thought riced cauliflower meant and one person said don’t add any water because there is enough moisture in it. I’m going to try this recipe. I love pizza, but it would be nice to make it somewhat healthy once in a while!

    • You may not need the water. I just added it to be sure and then squeezed out all the extra once it was cooked.
      I also would make 1 1/2 times recipe if its for your family. I actually made a double batch and made two pizzas and had a few pieces left-over.
      If you have a food processor or chopper, I would use that vs a blender to rice the cauliflower. It gets kinda messy. (I have a ninja chopper that I use and it works great.)

      Hey just thought I’d reply to help out, you totally don’t need extra water :) . When I cook riced cauliflower in the microwave it is plenty moist by the time it’s done!

    The Pack should have won! Would have loved to join you for the game AND the meal! This looks yummy!

    • The boys have been into wings lately…so we thought we would try them at home and grill them so they were healthier. It was all a pretty big hit. Of course, the homemade icecream was everyone’s favorite:)
      Only 1 month til vacation!
