This soup is quick and easy! It also tastes great on a cold winter’s day.
Ingredients:
1 yellow onion, chopped
3 cloves garlic, chopped
1 tsp cumin
1-2 T curry (depends on personal taste)
1 T EVOO or coconut oil
3 large leeks, chopped
4 cups chicken stock
4 sweet potatoes, peeled and chopped
1 can coconut milk
Sea salt and pepper to taste
In large pot, saute onion until softened in oil. Add in leeks and garlic. Saute for 2-3 minutes. Add spices, stock, and sweet potatoes. Bring to boil and then cover and let simmer for 15 minutes.
Remove from heat and add coconut milk. Puree til smooth in blender. Serve hot.
This is so easy and makes a great left-over for your weekday lunch too.



I made a sweet potato apple soup the other day. It had a whole onion in it and it was way to onion tasting for me – I’m not a big onion fan. I’d only use 1/2 the next time I made it.
