If there is one thing the Unprocessed Challenge (see button on right) has taught me, it is that almost anything I would want to eat can be made unprocessed if I take the time. Truthfully, most things are just as quick to make without all the added junk.
I love Quiche. I LOVE quick lunches even more. This recipe was started at 1200pm and on the table eaten by 1245pm! It is really good
Even my 4 yr old thought it was great!
Easy Whole-Wheat Pie Crust:
- 1.5 cups whole-wheat flour
- 1/2 cup coconut oil
- 1/2 teaspoon salt
- 2 tablespoons milk
In a 9-inch pie pan, combine all ingredients and mix with a fork. After mixing well, use your hand to form a ball in the pan and then press into pan. Bring it up on the sides and pinch the top (with your finger or a fork). Then mix and pour Quiche filling right into the raw crust. (It will be crumbly)
Quiche Filling:
- 1.5 cups skim milk (you can also use cream or regular half & half, but we think it’s tasty with good old milk)
- 4 eggs, beaten
- Sea salt & Pepper to taste
- Dash cayenne pepper
- We mixed in spinach and parmesan cheese.
Whisk together all ingredients thoroughly and then pour into crust.
Bake at 375 for 30 – 40 minutes or until filling is set.
